Easy Spicy Soy Garlic Chicken Ramen

Ingredients

Sauce

  • 3 tbsps Soy Sauce
  • 2 tbsp Rice Wine Vinegar
  • 2 tbsps Sugar
  • 1/4 cup Chicken Stock
  • 4 cloves Garlic

Noodles & Chicken

  • 2 Chicken thighs Skin-on (I used the whole pack of chicken thighs)
  • 16 oz Ramen Noodles
  • 1 tbsp Sesame oil I did not use that much Sesame oil in my recipe. I only used 1 tsp because it is potent
  • 2 Green onions diced
  • 2 Ramen Eggs
  • Toasted Seaweed gim/nori
  • Fresh Ground Pepper To taste
  • Bean Sprouts Garnish
  • Thai Red Chili's Garnish
  • Spicy Chili Crisps Garnish

Instructions

  1. Combine all ingredients for sauce in a mixing bowl and set aside.

  2. Bring a pot of water to boil. Heat a medium size pot over medium high heat, add cooking oil and swirl to coat. 

  3. Add chicken, skin side down. Sear chicken 5 minutes or until skins are golden brown. Flip over, cook 2 to 3 minutes or until chicken is fully cooked. Tap out excess oil with paper towel as needed.

  4. Pour in the sauce mixture and let it simmer. Place the ramen noodles into boiling water. Cook noodles by following directions of package you’re using. Drain and add into the chicken and sauce pot. 

  5. Drizzle sesame oil on top of noodles. Toss noodles until they are coated evenly with sauce. Transfer to a serving bowl and garnish with green onions, ramen egg, bean sprouts, thai red chili's, spicy chili crisps, and nori. Finally, sprinkle black pepper right on top and it’s done! Enjoy!

Recipe Notes

I doubled my recipe and added a few extra ingredients to make it spicy. If you do not like it spicy, you can omit the chili's and Spicy Chili Crisps
